Is there any way to customize the Exchange 2003 webmail feature besides just the security. Like change it to classic mode so it looks just like Outlook 2000. Or maybe change some colors for better corporate branding. Etc.

Absolutely. You should be able to customize just about everything in OWA. It is all just html colors that are contained in a CSS file. Here is a link that explains how to customize OWA using themes. http://www.msexchange.org/pages/article.asp?id=628 Also, you should check out the new OWA Web Administration download that was just released by Microsoft.
As far as making it look like OWA 2000, the easiest solution for that is to enable SSL and Forms-based authentication on your server (which gives you a logon page), then users can choose to log in to either the Premium (all of the new features including drag and drop, right-click action menus, etc) or the Basic client, which should look like OWA 2000.
Is this the type of info you are looking for? Also, you can modify the logon page as well (like you could with Exchange 5.5 OWA).
