Question : Locking a jpeg signature in Adobe Professional 8.0

I have to admit, I have no idea where to start! The jpeg of a scanned signature has been inserted into the signature area of a document and successfully created as a pdf. The user in question wants to lock the signature portion only against copying to other documents. The rest of the document can be copied into other applications, such as Word. Apparently this couple be done in versions of Acrobat Professional previous to 8.0 There are no restrictions as to printing the document. Can this be done? Or if there is something in Word I can do that will still lock the signature when it is created as a pdf, that would work also.

No, not with PDF. Anything you do in regards to document security, is done for the whole document, and it's not possible to just single out one element. This was never possible in PDF/Acrobat.
