I am looking for a MSSQL - reference manual.
I would like to know what functions/commands that the server will accept.

Does it make a difference on a Mac machine.

Expand the Transact SQL Reference branch on the left side.  All of the TSQL (which is the dialect used in MS SQL Server) commands are listed there.

MAC or not does not matter - it is the SQL Server that interprets the commands, not the local machine.
