What CAL's do i need ?????

Answer : CAL's for new 2003 network

Based on the exact specifications you provided, here's what you need along with the SKU's for Open Value License (which is the best pricing for your size company, must be acquired through a Microsoft Licensing Partner, and requires a three-year agreement... but payments are spread over three years).  My calculation came to $9,235.00 per year for the following:

Quantity       Product           Part
2      Microsoft® Windows® Server Standard Win32 English License/Software Assurance Pack Microsoft Volume License      P73-00205
120      Microsoft® Windows® Server CAL English License/Software Assurance Pack Microsoft Volume License User CAL      R18-00130
1      Microsoft® Exchange Server Standard English License/Software Assurance Pack Microsoft Volume License      312-02176
120      Microsoft® Exchange CAL English License/Software Assurance Pack Microsoft Volume License User CAL      394-00529
1      Microsoft® Internet Security & Accel Server Standard Ed English License/Software Assurance Pack Microsoft Volume License 1 Processor License      E84-00307
10      Microsoft® Windows® Terminal Svr CAL English License/Software Assurance Pack Microsoft Volume License User CAL      R19-00129

One thing you didn't specify is the number of devices you have connecting to the servers.  If you have multiple users sharing the same computer you would be able to use a DEVICE CAL instead of USER CAL for server access (Exchange would still need to be per user to have separate mailboxes) thus lowering the total number of CALs you need (at about $18.50 each per year per CAL).
