Question : Microsoft Exchange - What is the easiest way to migrate to a new server

I have a old dying server and I just re-purposed one of our high spec servers and I would like to move our exchange server from the old server to the new high spec one. I am wondering if someone can provide me with the best way to do this. I was thinking to just have the new server join the domain and install exchange server onto this server and then move the mailboxes to this server, and once all mailboxes have been moved to simply uninstall exchange from the old server and demote it and finally remove it from the network.

Is my thinking off, any input would be greatly appreciated.
