Question : Implementing Document Workflow in Sharepoint & InfoPath

I am looking for information on what (if any) document workflow can be implemented using:

Office 2003 and Office 2007
Sharepoint Server 2007
InfoPath
Small Business Server 2003 with Active Directory deployed to manage users
Microsoft Exchange 2003 or 2007 (Exchange not yet implemented)
PC OS = XP Pro + Vista Business

For example; I want to convert existing paper based processes onto electronic forms and be able to both automatically route those documents as they progress througha  pre-defined workflow as well as manually route them (perhaps if a process doesn't exist or a modified process path is required).
