I have an email address [email protected], for example. Is there a way to assign that email address to multiple users so each user has access to email address?

No. You cannot. What you can do, however, is create one mailbox which has this email address assigned. On the Exchange Advanced tab, you can press the Mailbox Rights button, and add one or more users into that permissions box who should have access to the mailbox. Once these users are granted the "Full Mailbox Access" privilege in the same dialog box, they will be able to go, in Outlook, to File > Open > Other User's Mailbox and view the contents of this info@ mailbox.
