Question : Best Practices For Upgrading To 2003 Native Domain?

We are currently running our Forest/Domain in Native 2000 mode. All of our Domain Controllers are running Windows 2003 Server and the Schema has been updated for the 2003 DCs.
We are looking to upgrade our domain to Native 2003. Management is seriously paranoid about this and want to make sure that we can back out of the change should something go wrong.
What are the best practices to follow when doing this change?
Also, we are running Exchange 2003 w/SP2 on a Windows 2003 server is that might make any difference.

Normally, there aren't many issues associated with this process, as we are adding functionality, and not removing it. Here is some good documentation on the different levels:
