Question : Exchange 2003 Setup Guide: idiots guide

Hi Experts, I am looking for a good guide to setting up an exchange 2003 server, i support a school so users won't be logging onto specific machines most of the time, would i be right to assume roaming profiles would be part of an exchange build in this type of environment?

Writing a setup guide for you is really out of the scope for this type of site. That is something a good quality Exchange consultant would do as part of the deployment.
There are plenty of books on Exchange deployment, particularly with Exchange 2003. Feel free to post questions about aspects of the deployment, but asking people to complete a blank sheet of paper will get very little response. An educational deployment is particularly tricky - if it is a mixed school then you have roughly half of the school population who think they know more about computers than you do and will attempt to hack or change things for their own benefit.
On your specific point above, I would not suggest roaming profiles. Most of the benefits of roaming profiles can be achieved in other ways via folder redirection, group policies and the Office Resource Kit tools for the deployment and automatic configuration of Outlook. With care and correct planning users can move between machines and have everything follow them around.
