If I want to simply periodically image a 2003 Server Enterprise or Standard, will Symantec Ghost Solution Suite 2.0 be all I need?

Since you make no note of your hardware platform nor of the purpose of your image, the short answer is "Yes, that should be all you need."

Longer answer says, we are assuming you will either be restoring your image to the same identical hardware, or  else that you are configuring the divice manager correctly and using sysprep so you you end up with a hardware independent base image you can then load on to other machines.
